Part 1 of Summer Shape Up: Train Your Brain To Work For You.

20150530_094024I’ve been absent for 2 weeks from my blog and it’s killed me!  We’ve had 2 big graduations, parties, and extra travel; but the real reason has been that my computer died.

Well, actually, my computer was killed by a coffee spill:(  But I finally have a new one and it’s working and all is well!

All is not well for several women who’ve emailed me in the IMG951389past 2 weeks, wanting a diet plan that’ll whip them into shape for Bathing Suit Season.

I’ve got “plans”; as that’s my job.  But here’s part of my goal: To teach that our thoughts are more important to health and weight loss than a food plan.  Honest.  Really.  It’s true.

Does this sound like you:  “I’m so fat, I’m barely going to eat.  I’m going to start every day off with either a fast, or a juice.  I’m going to workout at least 5 days a week, with sprints!  Lunch and dinner will be miniature!  Boiled chicken and steamed broccoli!  The weight will pour off, and I’ll look just like all the women on the magazine covers by the end of the month.  Woo-hoo for diets!”

Reality check:  statistically, about 100% of EVERYONE who goes on a diet gains the weight back; more than 50% gain more.

Have you heard the phrase, “Stop the insanity!” ?  STOP THE INSANITY!  Would the above plan take off weight?  ABSOLUTELY!  Would it stay off? No.

We’ve got to work on our mind; the mind’s the priority.  If we don’t train our mind to work for us, we’ll never stick to a healthy food plan, ever.  We won’t even make a healthy food plan;  we’ll make a dumb food plan that guarantees failure.

Real health and fitness, being a great weight, is about the actions we take every single day, cumulatively.  Little bursts of starvation or action have no positive results.

To stick to a healthy plan, we have to BELIEVE that food and exercise and thoughts matter, that they create us, because they do.  They really do.

20150530_094802(0)Bad foods (processed flours and sugars, chemicals, hydrogenated fats) make a bad body and a bad mind.  Nothing works right, and I’m not just talking fuzzy thinking or a big butt, which stink.  I’m talking Cancer, Heart Disease, Auto Immune Issues, Neurological Problems, Diabetes, Pain, Headaches, etc. You get the point.

I’m on a mission!  Food is Medicine or Food is Poison, and I want everyone to believe that so much that it affects our behavior.  This is important.  A belief that we need to lose weight is NEVER enough to effect permanent behavior change.  Never.

But a belief that Bad Food causes Cancer and Disease, in us and our children, now THAT can cause behavior change.

You know what else Bad Foods cause?  Bad decisions.  Our thoughts are actually structural.  Our thoughts and memories are literally made out of proteins.  They’re not little vaporous words floating through our mind, like in a cartoon.

Quality in, quality out.

These protein structures, aka memories, affect our decisions and attitudes.  Again, quality in, quality out.

Want productive thoughts that lead to healthy actions?  We need to be Intentional and Discipled about our health.  To be intentional and disciplined requires knowledge and application.  This is where most of us struggle, right?  Every single thing we give attention to, that we practice and focus on, grows.  If we practice and focus on training our thoughts to lead to healthy actions, we’ll lose weight and get healthy.

Honest.  It’s that simple.

But it’s not easy.  Most things valuable and good aren’t easy.  Should “easy” be a criteria for what we do?   Is that what we teach our kids?

The next few Posts I do are going to be on Training Our Brains for Healthy Behaviors – Every Day.  Not because I’m an expert at it, but because I’m a student of it.   Habits, behaviors, practiced and learned attitudes; I LOVE THAT STUFF!!  I can’t get enough of it!

When we train our mind to work for us and not against us, you know what we lose (in addition to weight!)?  STRESS.  If we believe that what we put in our mouth is going to make us tired, depressed, bitchy, bloated, sick, and fat, then there’s no decision-making-stress when that temptation is put in front of us.  A trained mind allows us to easily choose foods that are good for us.

Join me over the next few weeks as I really zero in on developing habits that lead to a lean and healthy body.  Anyone and everyone can do this.  Let’s commit to becoming the person we’ve always wanted to be.

You’re Not Lazy and You’re Not Crazy; It’s Just Your Hormones.

OLYMPUS DIGITAL CAMERAI recently tested my estrogen and progesterone levels – at home. 🙂  I’m 50 in a few weeks, and passed the “12 months no period = menopause” mark in January. I was curious.

It’s not the first time I’ve tested my sex hormones.  Three times in the past, I went through my OB-Gyn for hormone blood tests, covered by insurance; and then 3 times I did both saliva and blood spot tests through a Functional Medicine doctor, and payed a fortune out of pocket.  I also tested my cortisol levels throughout the day.

Not this time!  Same lab, same tests, I paid $70, and had the results sent right to me.  Freedom! I’ll explain how you can do this at the end of this post.  First, let me explain why I think it’s a good idea to know what’s going on with our hormones.

Hormones Rule Us.  This isn’t a Post on menopause, it’s a Post about body weight, and how we can use information to really tailor that whole “Food is Medicine” thing.  It’s also a Post to reinforce that our body is a Chemistry Set, not a Math Equation.  The whole calories in/calories out….. we don’t run that way.

Let me bullet point some facts about food and hormones to illustrate the futileness of believing that weight loss comes from calorie deficits, and the hormonal effects when we employ traditional diet methods, or even a Standard American Diet.

* The thyroid gland slows down production of thyroid hormone – which slows down metabolism – as soon as it even suspects a lack of food.  Our thyroid gland is supposed to protect us from starving.  The result of a few rounds of dieting?  A thyroid that stays sluggish even when calorie consumption rises.

* When we eat grains and sugar (all grains digest to sugar in the gut), the result is high blood sugar.  High blood sugar induces high levels of the hormone Insulin.  Insulin is a building, storage hormone, it’s also a caustic damaging hormone when in excess.  For most Americans, insulin is in excess.

* Studies show that chronically high blood sugar actually destroys the thyroid gland, lowering metabolism even more via less thyroid hormone.

* When the hormone Insulin is elevated (say, after a breakfast of cereal, or a dinner of pasta), our cells are literally prohibited from burning fat for fuel.  They’re only allowed to burn sugar. In our body, that’s a rule we can’t change.  It’s part of our design.

* What happens when Insulin remains high – a la Insulin Resistance?  Insulin resistance leads to Leptin resistance.  Leptin is a satiety hormone.  “Resistance” means the hormone can’t get into the cells to deliver it’s message.   Leptin resistance means constant hunger.

* Ghrelin is a hunger hormone. It’s supposed to rise when our stomach is empty, and fall after we eat.  Studies show that in people who eat “diet food”, ghrelin doesn’t fall, or fall properly.  The result:  we stay hungry.  We need Real Whole Food to make the hunger hormones and the satiety hormones function correctly.  Diet Coke with a Protein Bar won’t work; actually, that’s a recipe for hormonal disaster.

* Estrogen Dominance is pervasive today, in men, women, and children.  Too much estrogen causes low testosterone in men.  Excess estrogen causes low progesterone in women.  These are both hormonal situations that lead to weight gain.

* Cortisol is a hormone produced in the adrenal glands in response to the brains perception of stress, any kind of stress, even fake stress as in a scary movie.  Cortisol production inhibits sex hormone production.  Chronically high cortisol means chronically low sex hormones.  Chronically high cortisol is linked to insulin resistance ( it blocks insulin receptors on cells) and belly fat – and heart disease.

* Lack of sleep messes up more hormones than we can count.  One of them is ghrelin.  Lack of sleep raises ghrelin, which increases hunger.

* Thyroid hormone – again, responsible for our metabolism – is negatively affected by consumption of soy, fluoride, and chlorine.  Think protein bars, processed food, and municipal water.

* Drinking alcohol, any alcohol, causes an enzyme called aromatase to convert testosterone into estrogen.  This happens to both men and women, and it causes “estrogen belly”, formerly know as “beer belly”.

*A diet full of processed foods, flour, sugar, and chemicals, severely disrupts our gut flora (even if this diet is low calorie).  Our gut flora are highly involved in whether we burn predominantly fat or sugar.  One example, and there’s many, is that the more diverse our gut species are, the better our liver gets rid of old hormones, like estrogen.  Poor gut flora means poor elimination, and those hormones stay dangerously high in the blood.

* Numerous studies show that Vitamin D – which is actually a hormone, greatly influences both weight loss and inflammation levels.  Vitamin D deficiency is epidemic!

* Numerous studies show that excessive exercise and chronic dieting raise levels of cortisol in the blood.  Just like when Insulin is high, when cortisol is high, the body doesn’t burn fat, it burns sugar.

* Both Fructose and Trans Fats (present in most prepared foods, “diet” or not) both cause Insulin Resistance and raise markers of inflammatory hormones, again, inhibiting fat burning in the cell.

All that’s just the tip of the iceberg.  Hopefully it was enough to convince you that losing weight isn’t about starving yourself, mini meals, excessive exercise, and diet foods.  All that stuff does the opposite of permanent weight loss; those kind of diet efforts put you into a hormonal state that makes weight loss impossible.

How does this tie in with me testing some of my hormones at home?  My health doesn’t come from my doctor; my health – and a healthy weight – comes from me paying attention to my body and making changes when I need too.  Having normal levels of sex hormones is really important, to my weight, my brain, my energy, my immune system.

Everything is so connected.  We’re not a bunch of individual parts that work independently, not even close.  I also test my blood sugar, at least a couple times a month, and just recently I did an A1C ( which shows a 90 day average of blood sugar – a great marker for Alzheimer’s and inflammation ).

Food is medicine, or food is poison.  When I know what’s going on in my body, I can literally use food as my medicine.  For instance, now that I know how low my estrogen is, and that I’m fully menopausal, I’m using particular foods and herbs to naturally raise my estrogen, and progesterone.  I’ll test again this summer and see how that’s working.

Last year I got really into Bikram yoga.  A friend of mind wondered if that level of heat stress caused a cortisol release, which causes high blood sugar.  So I took my glucometer to the studio and tested a couple times.  I’ve also tested after I’ve taught some tough boot camp classes.  Exercise doesn’t stress me, I know that now because my blood sugar was good each time.

However, I’ve also tested after tornados blow through my house and seen that my blood sugar is high.  ( we’re a big family who loves each other but … stress happens. )

Testing at home is fun, affordable, and while a full CBC panel can be confusing to interpret, a hormone panel, blood sugar numbers, and A1C aren’t, at all.  And they give you some real black and white answers about the state of your health.

I encourage all my weight loss clients to regularly test their blood sugar as it’s such a strong tool for weight loss:  if blood sugar’s high, the hormone Insulin is high.  When insulin is high, fat loss doesn’t happen.  Notice I said fat loss not weight loss.  You can starve some weight off, but if insulin is high, and worse, if the hormone cortisol is high from the stress of dieting/hunger/excessive exercise, the weight comes mostly in the form of muscle tissue, not fat tissue.  Less muscle tissue means a lower daily calorie burn.

Recipe Makeovers: Cauliflower Pizza Crusts and Caesar Salad Dressing that make you Lean and Healthy

My response:  EVERY SINGLE POST IS ON WEIGHT.  Food is Medicine or Food is Poison, and our weight is a side effect of that fact.

If Weight Loss is our first priority when it comes to food, We’ll NEVER SUCCESSFULLY LOSE WEIGHT AND KEEP IT OFF. Ever.  95 – 99% of everyone who loses weight on a Diet gains it back.

Low calorie foods, low fat plans, starving ourself, skipping meals, exercising a ton, and STRESSING ABOUT OUR WEIGHT are literally guaranteed to make us gain weight in the long run, because we’re eating toxic food and/or employing toxic behaviors.  Poison.

Weight Loss is never a priority for our body or brain.  For women particularly, losing weight is the last thing our body wants to do, even when we carry excess fat.  Fat’s crucial not just for building our Brain, Glands, Organs, Bones, and Immune System, but our body makes many of our Hormones from fatty acids.

Healthy fats, vegetables, herbs, spices, clean proteins, seasonal fruit, nuts, seeds…..Medicine.

My point?  To lose weight and keep it off, we HAVE to eat Medicine Foods.  Also, cut the Grains, Sugars, and Chemicals; those things ruin our liver, our brain, our arteries and destroy our hormones. Permanent weight loss is impossible as long as they’re a regular part of our diet.

Here’s some recipe makeovers that I promise are husband and kid approved. These recipes contain Nutrient Dense Real Whole Foods (Medicine) guaranteed to satisfy our body and brain, and help us lose weight.

WARNING/ADVICE:  Sometimes with picky kids and husbands, it’s best NOT to tell them what’s in the food.  Don’t set yourself up for snide (or worse) comments about the ingredients or your efforts to make you and your family healthier.  Just do it.  Stay strong and determined no matter what mud a teenager slings at you.  The great thing about Real Whole Food is that fat, herbs, and spices make EVERYTHING taste good.  Broccoli with butter, parm, and sea salt?  DELICIOUS.  Chicken with skin on/bone in?  Delicious.  Bacon, brussels, butter, sea salt and pepper?  Delicious.  Stay with the program, be persistent, and eventually,… you’ll win.

If you look online for Cauliflower Pizza Crust recipes, you’ll find 1.6 million; they’re nobody’s secret, and they’re all pretty similar.  (Helpful hints to follow) Here’s the recipe I use:

CAULIFLOWER CRUST PIZZA

Full head of cauliflower, RICED ( in your food processor or Vitamix )

1 egg
1 tbsp sea salt
1 tbsp Italian seasoning
1/2 cup of your favorite cheese.  You’ll see recipes that use goat, parm, mozzarella, and cheddar, just pick one.

Directions: Set oven to 450.  “Rice” the whole head of cauliflower, and then either steam it ( more dishes, but better ) or put it in a pot of 1″ water and cook it, just for a couple of minutes.

IMPORTANT:  YOU HAVE TO GET ALL THE WATER OUT OF THE CAULIFLOWER.  Don’t whine.  Think positive thoughts, like, you’re going to have pizza and you’re not going to feel stuffed/bloated/or regretful the next day, PLUS, you’re eating a sulfur containing cruciferous vegetable that prevents cancer and disease.  Good thoughts.

I put my cooked cauliflower in a fine mesh strainer and press with a big wooden spoon, then I put it in a dishtowel and twist and wring until even more water comes out.  Cauliflower contains a lot of water, and you need it fairly dry.

When you’re done, mix it in a bowl with all the other ingredients; if you used a big head, you have enough for 2 pizzas, or one very thick crust. You only need about 2.5 cups per thin crust. Thicker crusts may not act like “real” pizza, i.e, you’ll have to cut them with a fork instead of holding them.  MOMS:  if your kids are suspicious of your efforts, make the crusts thin so they’ll stay together when they’re held. I’ve been at this long enough that I can make a thick crust and we all use forks, but switching the family diet from Fake Foods (poison) to Real Foods  (medicine) needs to be done gently, and wisely.

Put a piece of parchment paper on your stone, and use your hands to form your crust, then bake it for anywhere from 10/12 minutes for a thin crust, to 25 minutes for a thick crust. (read my hints at end of post)

When it’s baked, load it with your favorite toppings.  Last night I used slow roasted tomatoes, sausage, onions, herbs, and cheese.

Back in the oven at 425, for 16 minutes, and you can make your salad and dressing.

Caesar Salad and Dressing:   Look at these ingredients! How did we ever start thinking that brain food like this could be bad for us???

3 eggs ( I use farm fresh eggs, but use pasteurized if you want )
1 can anchovies
1-2 garlic cloves
1 tbsp Red Wine vinegar
1/4-1/2 tsp sea salt
1/2 c lemon juice
1/2 c parm
1/2 tsp yellow mustard

1/2 cup of Extra Virgin olive oil

Directions for dressing:  put the first 8 ingredients into your BLENDER or VITAMIX, and blend for a minute.   Then sloooowly pour in the olive oil; you’re emulsifying it, that means you need to drizzle the olive oil into the mix for it to set up thickly.

Pour this over a bowl full of romaine, shredded parm, and bread crumbs made from COCONUT MILK bread croutons.  Or just make your favorite salad, and use this dressing because it’s absolutely delicious and your family will love it.

A few last words of advice:

1) I’ve heard juicing the cauliflower is the best way to go, no wringing, but I haven’t tried it.

2) If your cauliflower head is extra big, add an egg white.

3) Judge your crust by how it looks more than time; it should turn light brown and “crusty”.

4) If after all your efforts the “dough” is still pretty wet, add 1/2 to 1 tbsp of coconut flour.  Coconut flour absorbs liquid;  start with the 1/2 tbsp and go from there.

5) To make croutons with Coconut Milk Bread, cut off a slice, tear into pieces, drizzle with olive oil, salt, and bake for 10 minutes on 350.  Judge from there if they need a few more minutes.

 

Weight Loss: Gluten Free Foods Keep You Sugar Burning Instead Of Fat Burning

OLYMPUS DIGITAL CAMERAClients I work with often make the mistake of thinking that Gluten Free Food PRODUCTS are not only healthy, but Weight Loss Inducing.  That’s a Big Mistake.

Gluten Free Food Products are missing the damaging gluten protein – that’s true.  But Gluten Free products like pasta, bread, cereal, and cookies, are made with High Glycemic, very easily digested and absorbed, SIMPLE SUGARS.

When we eat Simple Sugars, our blood sugar levels and blood insulin levels skyrocket, and damage happens, always.  Whether the simple sugar is from white flour, brown flour, rice flour, or corn flour, i.e. gluten-free or NOT, simple sugars flood our blood stream quickly and easily wreck havoc – every. single. time.

I love to say that a Carb is a Carb is a Carb.  No matter the source, our gut digests Carbs to the single sugar/simple sugar GLUCOSE, which then goes through the small intestine wall and into the blood stream.  When our blood sugar and insulin levels are high our arteries become damaged, our brain accumulates plaque, our blood becomes thick and sticky, and proteins and fats in the blood and affixed to the body ( our thyroid, our intestine walls, our skin..) become “Glycated”, or damaged – permanently.

These Simple Sugar Gluten Free Products also make us fat.  Here’s how:  when our blood sugar is high, anything above 100mg/dcl, insulin is released from the pancreas to lower it.  Some blood sugar can go into muscle cells (or not), a tiny bit of blood sugar can be stored in the liver (or not), and ALL THE REST OF THE EXCESS IS REMADE INTO TRIGLYCERIDES. Triglycerides = Body Fat.  

Glucose/blood sugar/carbs don’t make ANY part of us, not our hair, our eyes, our bones, our teeth. Carbs are just an energy source, and we can’t even store very much.  Excess ALWAYS gets made into Body Fat.  Always.

Another undesirable result of High Blood Sugar from Gluten Free Products:  Insulin Resistance.  When you have insulin resistance, your body’s ability to literally use FAT FOR FUEL is SHUT DOWN.  Instead, your body burns sugar.  Period.  This isn’t healthy or normal.  WebMD says at this point at least 34% of all Americans are fully Insulin Resistant.  Imagine what the number would be if it included everyone who was hovering at full Insulin Resistance??  50%?  60%?  More?   We’re 70% overweight in the country;  the correlation between ANY belly fat and insulin resistance is very high.   Got Belly Fat?

If you diet and exercise, and can’t lose weight, you’ve got a problem.  It’s not normal.  When you’re a Sugar Burner, your body sets itself up to mostly burn glucose.  Even in the absence of food, it still wants to burn Sugar not Body Fat.  This means that when Sugar Burners cut calories, or increase exercise, the body would rather break down muscle tissue and convert it to glucose than burn body fat.  It’s easier, and the body ALWAYS does what’s easier.

If you want to quit burning so much sugar for fuel, and start burning your fat stores, you’ll have to (1) cut out the grains and sugars, even gluten free grains, and (2) up your healthy fat intake.  Seriously, if you want your cells to become acclimated to burning fat, there’s a whole set up of enzymes and protocols that go along with that.  As long as there’s excess sugar in your body, from any source ( gluten free products, grains, and sugars, sometimes even fruit) YOUR BODY MUST BURN SUGAR.  It takes a real consistency of effort before your body believes you and sets up fat burning mechanisms in your cells.

Something that struck me in the book Keto-Clarity, was how many doctors were quoted as saying that before several decades ago, because the average American diet was much lower in carbohydrate, and higher in healthier fats, it would have been normal to burn both Glucose and Fat throughout the day and night.  Low states of Ketosis, where ketone bodies were burned, would also have been very normal.  There’s entire cultures that ran on Ketone bodies and fatty acids easily and with great health, throughout the world, throughout history and even today. ( For instance, very Northern  and Desert cultures with little access to plants or grains)

If you can’t lose weight, there’s a good chance you’re insulin resistant, you’re a sugar burner.  Even if you DON’T need to lose weight, but eat a high carb diet, you’re a sugar burner;  inflammation is happening.

It’s hard when you’re the only one in your house, your office, or your group, who wants to start eating better.   Our world isn’t conducive to healthy eating, at all.   Kids are rewarded with junk food at school, clubs, and after all their sporting events.  Offices provide donuts, bagels, subs and pizza at meetings, as if that kind of food makes people more productive, and friend groups tend to center around drinking alcohol, and eating the kind of foods that lowered inhibition, from alcohol, induces.  Church lays out donuts and coffee, there’s bowls of candy on the table when you wait for your car to be inspected, and popcorn and candy at the movies seems obligatory.

Not only does the world collude against us, but apparently, we subconsciously seek out others who support our Bad Habits and Self Defeating Desires.

After you read this article, whether you need to lose weight or not, access what your relationships have become, access what your Down Time has become, access what your daily habits have become.  Friends and fun SHOULD have positive, long term consequences. Going to the office shouldn’t constantly throw you off your healthy eating routine.  Regrets, recriminations, resolve to “start again tomorrow”, those thoughts and feelings just lead to stress and bad hormones; if they’re normal for you, it’s time to make changes

Our health, our mood, our thoughts, they’re all the results of our actions every single day.  If we don’t step back and take an account of our time and our habits, before we know it, we’re living mindlessly, making bad choices, and teaching our kids to do the same thing.

Angel Food Cake! What I’m Eating To Be Ketogenic, Pictures, and Recipes

angelfood cakeHere’s something that for a long time I considered “Healthy”, but it isn’t:  Angel Food Cake.  I remember my mom making it when I was a kid because my dad was told he had High Cholesterol, and Angel Food Cake had zero cholesterol, which meant healthy (in the old days!).  Then she’d make a fat free pudding with skim milk, and Viola!:  Healthy Dessert!

Here’s the Ingredient list for Betty Crocker Angel Food Cake mix:

Thanks to a big dose of Aspartame, this pudding only has 8 grams of Sugar per serving, mostly, this pudding is a Giant Chemical.  The food dyes alone make it Poison, but the rest of those ingredients are just as bad.

Don’t do it!! Don’t be fooled by pretty desserts that promise no Fat and low Calories.  Our body NEEDS fat, and nutrients!  All those chemicals aren’t just potentially cancer causing, they’re bad for our LIVER ( the BIGGEST source of our Calorie Burn), our Heart ( oxidized cholesterol), our WEIGHT ( all that simple sugar will raise Blood Glucose right out of the normal range), and our Brain ( some of those chemicals are “excito-toxins”, and literally stimulate brain neurons to death!)

I keep getting questions about What I’m Eating to put myself into Ketosis.  It’s been 19 days on the Keto Diet, and I’ve been updating my What I Eat page pretty frequently.

Monday, my Ketones finally hit the “Medium” range, ( took a while!), my weight’s been incredibly stable at 129/130, my energy and sleep are great, and I’m finding this really do-able. That’s probably because I was already Real Whole Food/Paleo for the past few years, and said goodbye to grains and sugars a long time ago.

That said, on August 1st, I’m going back to my Real Whole Foods diet, with my occasional Potatoes, Bananas, and any vegetable I want! I’m glad I dove into the Keto Diet to figure out the nuances, because I think it’s incredibly Therapeutic and Beneficial for a number of health conditions, including:  Insulin Resistance, Cancer, Alzheimer’s, Parkinson’s, Thyroid disorders,  and Diabetes, to name a few.  Oh, and for those who are having a difficult time losing weight:  It’s fantastic!  

Before I show some food pics, and post the Angel Food cake recipe, here’s a little info on my upcoming weekend.

I have the DCAC Fitness Convention Thursday night through Sunday; I’m packing my breakfasts and lunches, but I’ll eat out each night.  I’ll be sure to update food and workouts though out the weekend.  I LOVE the DCAC!!

Here’s some of my Keto Meals from the past several days:

This was bone-in/skin on Chicken that I cooked on foil ( less pans to wash), and in the skillet: 6 tbsp butter, 1/4 c water, a whole head of cabbage, cauliflower, onion, and chives.  Topped with Cheese:)

To the right, that’s crumbled sausage, zucchini, cauliflower, chives, and garlic cooked in butter and you can’t tell, but there’s a whole skin from one of those chickens cut up and cooked in the pan too.  Topped with cheese of course!

And here’s the Angel Food Cake recipe, my notes are in BOLD throughout the recipe:

“HEALTHIFIED” ANGEL FOOD CAKE
12 egg whites
2 tsp cream of tartar
1 pinch salt
1 cup Jay Robb strawberry protein powder (or EGG WHITE powder if Dairy Free) ***I USED VANILLA, NOT STRAWBERRY BC I DON’T HAVE IT**
1 cup Swerve confectioners’ sweetener (or powdered erythritol) (I USED REGULAR SWERVE, NOT CONFECTIONERS – WORKED FINE)
1 tsp strawberry extract (or other extract) ( I USED LEMON EXTRACT BC I DON’T HAVE STRAWBERRY)

Preheat oven to 350 degrees F (175 degrees C). Sift whey protein and confectioners erythritol together and set aside. In a large clean bowl, whip egg whites with a pinch of salt until foamy (save the yolks for “healthified” creme brule, “healthified” coconut custard, OR “healthified” ice cream). Add cream of tartar and continue to beat until very stiff (you will be able to put bowl upside down and the whites won’t fall out). Add your favorite extract flavor. Quickly fold in whey mixture. Pour into a greased 10 inch tube pan. Bake at 350 degrees F (175 degrees C) for 45 minutes. Makes 14 servings.

 

*****MY OVEN WAS TOO HOT – LAST NIGHT I BAKED AT 325 FOR 38 MINUTES******

“HEALTHIFIED” CUSTARD

12 large egg yolks
1 cup unsweetened almond milk *****I USED COCONUT MILK FROM CAN – WORKED PERFECT
3/4 cup Swerve (or erythritol and 1/4 tsp stevia glycerite) I USED HALF SWERVE, HALF STEVIA
1/2 cup butter or coconut oil, melted – **I USED HALF OF EACH**

Whisk egg yolks, almond milk, and sweetener in medium metal bowl to blend. Slowly mix in the melted butter so the eggs don’t cook unevenly. Set bowl over saucepan of simmering water. Whisk mixture constantly and vigorously until thickened and instant-read thermometer inserted into mixture registers 140°F for 3 minutes, about 5 minutes total (or coats the back of a spoon). Remove mixture from over water. Serve warm or chilled. (If serving chilled, it can be prepared 1-3 days ahead and refrigerated. Re-whisk before serving.) Makes 4 servings.

Day 7 On Keto Diet Update, interesting Keto Facts, Cream Cheese Ball Recipe

OLYMPUS DIGITAL CAMERAI’m LOVING this Keto Diet!  I’ve had a few days this week where I should have been really tired, but I wasn’t, at all!
I had a quick moment of sadness that I couldn’t eat a Paleo Cookie at my mom’s house ( she makes the BEST), but it passed. I wasn’t hungry, just nostalgic for them.  I went home and made the cream cheese balls for dinner, and felt great.

I had stated in my last post that I was going to cut down on my protein portions, but I’ve changed my mind.  I HIT KETOSIS LAST NIGHT!!!   With nice, big protein portions, plenty of vegetables, and cream cheese balls ( dessert!).  My fat grams are in the HUNDREDS and my weight has remained stable after that initial drop.

I’ve NEVER had such a lack of hunger, ever.  Usually, around 4/5 pm, hunger starts to hit me.  This week, ZERO hunger, at all.  I’ve heard of that, but I haven’t experienced it.

Weight-loss attempts notoriously FAIL.  Almost 100% of EVERYONE who loses weight on a diet gains it back.  Weight loss is NEVER enough reason to stick to a new food plan.  Ever.  Make it about your health.

Reader question:  Debbie, why would YOU do a keto diet?  You don’t need to lose weight.

Here’s a FEW reasons why:

1)  Ketones have a really negative effect on cancer cells.  From somehow changing the pH around the cells to more alkaline, to eliminating or reducing cancers FAVORITE FOOD ( sugar ), ketones are not good for cancer cells.    Read this by David Servan-Schrell, MD, physician and neuroscience researcher:

…we all carry cancer cells in us. But .. we all have natural defenses that generally prevent these cells from turning into an aggressive disease. These include our immune system, the part of our biology that controls and reduces inflammation, and the foods that reduce the growth of new blood vessels needed by developing tumors.

In the West, one out of three people will develop cancer. But two-thirds will not. For these people, their natural defenses will have kept cancer at bay.

Think of Ketones as another immune defense for the reasons stated above. Here’s more: for our body to produce ketones, there has to be a serious decrease of dietary carbs, and normal blood glucose levels.  I.E: when we’re in Ketosis, our blood sugar levels are NOT high.  High blood sugar IMMEDIATELY suppresses the immune system, for up to 24 hours.  Think of someone who eats sugar and grains excessively every-day-all-day ( the Normal American); what the heck is going on with their immune system?  Nothing good.

2)  Several studies show that Ketones have a positive effect on degenerative brain diseases, from Alzheimer’s to Parkinsons to Dementia to Epilepsy to Bi-Polar to ADHD.   Ancetodal studies show that it eliminates “fuzzy thinking and bad memory”.  I Want That!  Who knows what I’ve done to my brain with YEAAARRSS of chemical diet foods, and excessive sugar and grains.  I used to go though a box of Kashi in 2 days!  What the heck did that constant high blood sugar do to me?

3) Study after study shows that a Ketogenic Diet REDUCES ALL MAKERS OF INFLAMMATION.   Inflammation is the cause of all disease.

If you’re looking for a great book, that’s super sciency, read The Art and Science of Low Carbohydrate Living.  It’s by 2 PhD’s who have 50 years of research and clinical experience between them.  They don’t have any skin in any game.  As a matter of fact, because a Ketogenic Diet is centered around changes in Food and Lifestyle, as opposed to Pharmaceuticals,  money making opportunities are few and far between.

What I’m really looking forward to is Keto Clarity, by Jimmy Moore and Dr. Eric Westman.  This book is coming out soon and I’ve already pre-ordered it.  Check out the “Experts Page”  This book is going to be Fantastic!

I’m finishing with a recipe:  Cream Cheese Balls.  Delicious if you love cheesecake!cream cheese balls

1 pkg of cream cheese (  I use this brand because it’s cultured, which means there’s good bacteria in it)
Juice from whole lemon
1 heaping TBSP stevia ( you might need more, depends on your tastes)
2 drops lemon oil ( again, use your own preference for tart )
1 tsp vanilla extract
1/4 c very soft coconut oil
Mash til thoroughly blended, roll into balls, then roll in fine,flaked coconut
Refrigerate or freeze.
Next time we’re doing this w/coco powder, and I also want to try Orange Extract.

 

Success Story: Conquer Your Blood Sugar and Your Food Addictions

dominos energy liftYou’re going to love today’s Success Story.  Aida has been working with me since last Fall, and so far, she’s lost more than 30 pounds ( so has her husband ). She’s also reduced and eliminated several medications, become a regular “packer” and
“cooker”, and broken her food addiction.  Really broken, as in, it’s amazing.  Thank goodness she listened to her “fear”.  Too many people AREN’T afraid of the state of their health, they think their prescription drugs actually make them well.  They don’t.

If you’re on meds, say like, BP pills, statins, mood meds, migraine/headache pills, pain pills, stomach pills, etc, you’re got  problems.  These medications aren’t making you better, they’re suppressing and managing your symptoms;  the CAUSE of the symptoms is still there and still doing damage. If you want to get healthy, you have to (1) eat for health (2) figure out the root cause of the symptoms and address that (lifestyle changes).

Aida’s a Type 2 Diabetic; diabetes 2 is a LIFESTYLE disease.  It can be reversed lucky strikethrough lifestyle changes.  Insulin and blood sugar rise and fall according to our food choices, exercise/activity, and stress management. No One has diabetes because they’re deficient in diabetes drugs.  Did you know that by 2020, the CDC predicts that 50% of the US will be diabetic, and that it will cost 3.35 TRILLION dollars to “manage” it.  Not CURE it, or REVERSE it, but MANAGE it.  No health care system EVER could afford that.  EVER.

What about Food Addiction, because this is HUGE.  I know I’ve said this before, but I’ll say it again: if you’re trying to get healthy/lose weight with Low Fat, No Fat foods, or Diet Processed Foods, you’re just feeding and nurturing your addiction and furthering your inflammatory state.   You’ve got to ditch Grains, Sugar, Chemicals, and Hydrogenated Oils, and you’ve got to focus on a diet full of healthy fats, good proteins, TONS of vegetables, some fruits, some nuts and seeds, some dairy if you can tolerate it.  Grains, sugars, and chemicals stimulate the Addictive Areas of Your Brain.  Always.

Think you can’t live without your Cereal, your Bread, Your Beer or Wine (liquid donuts)?  You can.  Lot’s of people break their addictions, why couldn’t you?

7UPMoms and Dads, are you raising future Diabetics, or future Food Addicts? If you’re raising your kids on a diet of pop tarts, cereals, sandwiches, pizza, and junk food, rest assured, you are.  And it will happen to them far quicker than it happened to your generation.  No One can eat those foods without accumulating damage.  No One.

Take control of your thoughts, instead of nurturing your addictions, nurture positive habits and attitudes about food, yourself, and exercising. Forget everything Big Food, Big Pharma, and our government has told you about Healthy Whole Grains.  All carbohydrates are broken down to single cell sugars in our gut; that means ALL CARBS BECOME EITHER GLUCOSE OR FRUCTOSE.  ALL OF THEM. High blood glucose and fructose levels and high insulin create an inflammatory state, and inflammation’s the cause of EVERY DISEASE OUT THERE.  You can change yourself.  Honest.  You can be an inspiration and example for your children.  You can feel energetic and well; you can be a healthy weight, start with Real Whole Food.

Here’s Aida’s story:

Last fall, I was scared. I was tired. I was frustrated.

I had let my health go unchecked, even though I knew better, and was on a lot of medications.  I had let my appetites go unchecked, knowing that it was hurting my body, but I was addicted.  Now, my doctors were getting really serious with me, and it made me scared. They kept adding more and more medications.  I had to do something, but I felt as if I had tried everything before and failed. Why try it again to just fail again?  When I tried to do what the doctors told me to do, it seemed as if I never improved, and sometimes got worse.  I was also seeing my husband’s health getting worse as well.  We didn’t want to do another weight loss diet. We needed to get healthy.  We wanted to get healthy.

Someone suggested I look at this website, and enter Debbie! Debbie sat us down together and began teaching us.  This is the first time I had heard most of the information she was sharing.  Her plan for us began with just eat real whole foods!  Our health would begin with what we put in our mouths, and our attitudes towards our foods.  Stop wheat and other grains – which we had done before and were somewhat successful with.  We knew we could do that.  Stop sugars, including most artificial sweeteners,  which would be tougher, because I was addicted.

We listened to what she had to say and began implementing this new approach and were shocked that almost immediately we saw improvement in our health.  Hunger went away.  Cravings went away.   For me, my blood sugars normalized within days!  I began to look forward to my next round of doctors, just to make sure that this new way of life was really working.  And it was!  All my “numbers” showed improvement within a couple of months, and have continued to improve with each doctor visit.  I have been taken off some of the medications.

Through monthly meetings and daily emails, Debbie has continued to teach and encourage.  She has helped me understand what makes me personally healthy. She has helped me with my food addictions. My husband’s health also reflects the changes we have made.

Now, I am looking forward to this spring, with clarity, with energy, and healthier (and lighter) than I have been in over 30 years!

Success Story! Weight issues, Fatigue, Joint Pain, and Reflux – sound familiar?

motivation and habitI love when I get to post a Success Story because they always hit home with so many people.  This one will also:  smart woman, years of weight issues, several diet attempts, stomach problems, joint issues, fatigue.  Ring any bells?  Rebecca solved all this without counting any calories, or following any traditional diet paradigms.

Here’s her story:

Like most women, I have struggled with weight my whole life; it wasn’t until I really started to have some significant quality of life issues, that I realized that something had to change….and fast!
I had met Debbie Abbott years ago where my husband Tim and I belonged to Old Town Athletic Club where she was a trainer/instructor, but had not really seen her in years. As God would have it, she ended up coming to Grace Bible Church where I had been a member of for years. Debbie was offering the women of the congregation some nutritional counseling classes and that was when I became aware of her nutritional training. I was unable to make the classes due to my work/life schedule in the Fire and Rescue Department, but took this as an opportunity and prompt to call her to make private appointments with her which I shared with my Mother, who was also having some health concerns.
It was February 2011 that we first got together, prior to our meeting, Debbie asked me to read some information on Mark’s Daily Apple “with an open mind” so I would have some knowledge on the subject of Paleo eating before we met. Well let me paint the picture of what my life was like at this point: in early 2011, I was 44 years old, a wife, mother of two children ages 24 and 6, and a 21 year Firefighter/Paramedic/Supervisor. Overall, I have always been active, considered myself healthy and obviously my job demands a certain minimum level of fitness. With the exception of a few very short periods of time in my life, I always seemed to be carrying that extra “20 or so pounds” around and praying/wishing/making new years resolutions that they would go away! Sound familiar? I followed every conventional diet known to human kind and with each one, I would loose some weight and it would come right back because it was never anything that I could maintain or feel good enough to want to. I had a life long history of elimination miseries and lactose intolerance, food sensitivities that would cause my skin to itch and break out, brain fog etc….. Finally, I had hit a wall, I went to my Doctor and had every known test done to find out why I was having chest and back pains, severe joint pains with weakness and disability, fatigue and trouble sleeping. I truly was fearful I had something really seriously wrong with me. I knew if things didn’t turn around soon, the state of my health was going to end my career long before I could really afford to retire! Well of course the Doctor said I was “fine”, maybe a little vitamin D deficiency but otherwise all my vitals looked great, BP 100/60, resting heart rate of 56, cholesterol and all blood levels NORMAL. I can tell you, I was far from normal or healthy!!! Now I had just given up cream in my coffee cold turkey to stop having the chest and back pain that the dairy was causing, but when I met with Debbie that first day and we talked about “grains and processed foods” something in me just clicked! I had tried conventional wisdom, the standard American diet and the laughable food pyramid to no avail. I was ready to really make a change that would be permanent and not only take my pain and fatigue away but lengthen my life and it’s quality….remember I had a six year old at the time and I really want to be able to enjoy the eventual grandchildren from both of my kids!
So I really took to heart everything that I was learning from Debbie about blood sugar and digestion, that is where it starts folks! After that very important first revolution and enlightenment, it is an adventure in real whole foods that has been so rewarding! The kicker is that not only did I start to feel better right away, no more roller coaster of ups and downs but the weight literally started falling off me : ) Everywhere I went, people would say something about how good I looked and asked me what I was doing. My self esteem had really taken a beating all those years with all the weight I had been carrying. People would always tell me that I was not overweight but “large framed” but I knew better, I felt terrible in my own skin. I was an educated health care provider for Pete’s sake! I was supposed to be an example to those I work with and here I was, unsuccessful in loosing the weight and keeping it off despite my “healthy lifestyle”. Oh we all thought we were doing everything right, grilling, baking, eating salads, using all the right oils and eating a “balanced” diet full of veggies, lean meats and fruits and yes lots of whole grains…the complex carbs, Hah! I felt so betrayed! After I got over the “I wish I had learned this 30 years ago, I got busy. I had to rethink everything I ever knew about healthy eating….low fat, high complex carbs, taking a multiple vitamin daily…blah blah blah! In a matter of weeks, there was such a noticeable difference both on the inside and out. The pain in my shoulders, elbows and wrists had just about disappeared, (caused by the inflammation in the grains I had been consuming daily) I was sleeping better, my mind was clearer and get this? I would eat three meals a day, with out snacking and I was really satisfied (and not hungry an hour after just eating a normal sized meal) throughout the day where I hadn’t been before following all the other “diets”.
I love to shop for and cook fresh food and I am blessed to have a wonderful, supportive husband, which I know is a big part of my success! My Daughter (who has lost 70 pounds!) my Mother,and my Husband have all experienced improved health and weight loss due the changes we have made in our daily eating, choosing real whole foods. Debbie frequently says , “leanness is a side effect of good nutrition”, and “nutrition is 90% of it”! I have adopted another saying from “Paleo Mom” when sharing this lifestyle with others,”It is only effort until it becomes routine”, that is so true!!! If you know me, you know that if I believe in something, I will talk your ear off about it! I just love telling people about real whole foods and staying away from anything processed or artificial. What breaks my heart is seeing all the people who you know could be so much healthier and happier if they could just get past the “I can’t give up this or that”. If they only realized that they would be getting so much more out of their lives and enjoy each day more if they would just “open their minds” and give real whole food a try. I am a true believer, never going back to the old way of eating, why would I? I have maintained a 25 pound weight loss for almost 3 years now…without dieting, exercising to excess or feeling hungry or deprived.

I am starting my 25th year in the Fairfax County Fire and Rescue Department as an EMS Supervisor/Captain II, and I no longer doubt that I can do my job and I look better in my uniform and feel like I am being the positive roll model for others in the department that I have always wanted to be.

I am so very grateful to Debbie Abbott for her tireless dedication to bringing the truth about real whole food nutrition to me; her passion is contagious and I hope everyone gets “the bug”!

Want to Lose Weight and Get Healthy? Eliminate Grains.

breadsDoes anything cause more anxiety in the food world than Carbohydrates?   Ask people to give up or cut back on bread, pasta, crackers, and chips, and you’ll often see fear in their eyes.  I’ve had 100 moms say to me, “what else do you feed your kids?”.  Grain based foods are cheap, plentiful, easily prepared and quickly served.  What’s faster than cereal for breakfast or pasta for dinner?  Has anything been pushed on us harder than grain based foods?  Have we ever seen a commercial of a group of guys bonding over steaks while watching football?  Or a harried mother shooing her kids to the school bus while passing them a turkey sausage?  ( I think the meat industry needs to hire me!) We’ve been subjected to a barrage of hypnotic grain pushing advertising for our entire lives, and it’s worked.

You all, grains are killing us. Please, please, keep reading.  If you need to lose weight, get rid of headaches, anxiety, ADD, or depression, if you need to reverse Diabetes or Heart Disease,  if you suffer from bad periods, bad skin, Man Boobs, low testosterone, sore and swollen joints, you can improve/fix all these conditions by eliminating grains – completely – from your life.

Here’s a quick rundown on what happens when we eat grains (from Oatmeal to Barley, to Wheat, to Spelt, Whichever and All) :  in your gut the grains are broken down to Glucose/Sugar, which leaches through your intestine wall right into the blood stream.  Now we’ll call it Blood Sugar. ( SPOILER:  whole wheat flour breaks down even quicker than white flour!! ) Your body needs to keep your Blood Sugar between 80 and 100.  Everything over 100 MUST BE DELT WITH IMMEDIATELY.  The pancreas releases the hormone Insulin, which grabs the excess BS and tries to remove it from the blood stream.  There are only 3 options: (1) some of the muscle cells will need a molecule of glucose (2) the emergency liver store might need some (3) ALL THE REST GET REMADE INTO TRIGLYCERIDES.  Then the liver makes LDL to transport those triglycerides thru your bloodstream and into the fat tissue in your abdominal area.

Other problems with grains and high blood sugar?  (1) Glycation, which is when the sticky blood sugar inappropriately attaches to, and damages, the cells on the back of your eyes, extremity nerve endings, liver cells, kidney cells, or forms into brain plaques. (2) Gluten proteins in grains.   Humans don’t have the enzymes to break down Glutens; the damage these proteins wreck is EXTENSIVE.  (3)  The hormone Insulin:  damaging and caustic. It goes through the arteries like a ball of barbed wire. Plus, the pancreas takes a hit when it has to pump out excessive amounts, like it would if you eat carbs all day long.

If you’ve been struggling with Weight or Health, and you’ve tried everything but eliminating grains, what do you have to lose by going grain free for a month? Really, what do you have to lose? Try it. One month. It’s the start of a whole New Year.  You could be totally different in 12 months if you want.
